Florentine Frittata (Vegetarian)
Last weekend Robby and I talked about going to Virginia Kitchen but we never got around to going. Ever since that conversation, I’ve been craving breakfast food. So last night I made Florentine Frittata from Cooking Light. If you like feta, roasted red peppers, spinach, and Ore Ida hash browns, this is the meal for you. I used my new cast iron skillet which is always fun and I absolutely love the flavorful bits of browned food it contributes to the mix. I omitted all of the salt that the recipe called for..which was a mistake. The portions are get this, 1/4 of the pan (they’re huge!). Definitely a repeater but I’ll use salt next time. This could be veganized by replacing Egg Beaters with Ener-G Egg Replacer and omitting feta (but feta is so so good).
