Quick Pizza Margherita (Vegetarian)
It was beautiful last Sunday but my allergies returned with the good weather, making me feel tired and a little blue. I picked out my recipes for the week and went out for my quick weekly shopping trip. I didn’t plan on making ‘Sunday Dinner’ but I had a craving for some comfort food I hadn’t eaten a while…PIZZA! So I got home, watched a little basketball and then whipped up, Cooking Light’s Quick Pizza Margherita. I’ve made this several times before and Rob and I both agree - it tastes better than delivery, it’s better for you, and it’s faster (less than 30 minutes). The fresh basil, drizzle of balsamic vinegar, and crunchy brown crust make this healthy recipe a definite repeater. The recipe is also vegetarian, but not vegan.
