Jamaican Chicken & Fish Chowda!

That’s right - Jamaican Chicken and Fish Chowder, but not together of course.
Tuesday night I made a new recipe, CL’s Jamaican Chicken with Mango Salsa. Man-o-man that is a repeater. It makes for a quick weeknight recipe (less than 30 minutes) but the best part by far was the mango salsa which I plan to reuse for chips and dips. I snuck a little bed of spinach onto each plate to add some nutrients. Stacey tested - Stephanie approved (she snacked on a little bit of mango salsa while in VA for work obligations).
Fish Chowder or “Chowda” as I like to say. Robby made this Wednesday night as he usually mans the kitchen on my soccer night. He put it all in the crockpot Wednesday morning and it resulted in one of my all-time favorite meals (My top 2 favorite Robby meals: are 1) Meatloaf with SunDried Tomatoes and 2) Fish Chowder). I can’t post the original recipe because it is in Robby’s Slow Cooker recipe book he received as a gift. Robby’s made this recipe about 6 times and he keeps modifying it and every time it is more delicious than the last. The fish stays firm but takes on all the flavors of the ingredients for a really great texture. I won’t reveal any more about the Fish Chowder as I’m afraid the chef will not appreciate me sharing the secrets to his recipe.
