I love the Cherry Almond Muffins from Vegan with a Venegance. The first time I made them with whole wheat flour to health them up even more. Bad move, so dry, hard to chew. I stuck to the recipe (as much as I am capable) and they are so yummy I have to hide them from myself so Lauren and Chris can have some! I added about 1/2 cup more cherries than it suggests. I recommend heating up for 5-10 seconds for ultimate taste bud gratification.
