Happiness is a Summer Garden: Tomatoes Simple & Sweet
Posted by stephy under Healthy Recipes, Vegetarian/Vegan Recipes
Summer is on it’s way and it makes me so happy inside I feel like someone is tickling me. I got this idea from ED&V and indulged my craving immediately.
I chose these small hydroponic tomatoes, cut in half, inserted garlic into the tomato juices and roasted with sea salt, pepper, oregano. DELICIOUS and SO EASY! Threw these together hot with pasta, spinach and artichoke hearts. Easy, delish weeknight meal.

I tried this tonight and it’s so yummy! The aroma while the tomatoes cooked was delicious. I used white beans and long pasta (spaghetti) like the original in ED&V but I added spinach like you did. I would like to try it with artichokes, but I didn’t have any and Chris really doesn’t like them. Next time I’ll have artichokes and just put them in mine. The tomatoes just by themselves will also make a great side dish!
